Creamy Egusi Melon Soup

Heat palm oil in a large pot. Add onion, garlic, and ginger. Sauté until fragrant.

Add beef cubes and brown on all sides. Cook for about 10 minutes.

Add ground egusi gradually, stirring constantly to prevent lumps.

Pour in beef stock slowly, continuing to stir.

Add ground crayfish, locust bean seeds, and scotch bonnet peppers. Simmer for 20 minutes.

Adjust seasoning with salt and pepper.

Add spinach or bitter leaf and stir gently. Cook for 5 more minutes until leaves are tender.

Serve hot with eba, semolina, fufu, or pounded yam.
